The olive collection is done by hand, when olives are in the stage of half-growing, and have taken the appropriate colour and the specified shape.
They are saved in special tanks with water and some salt, in order to take out the “known bitter”.
After a specific time, they are put into special bins, in 15-20% olive-oil and water with some salt, biological vinegar and perfumes.
Olives can preserve in perfect quality for a long time, till 2 years...
